Our Story

Mashima of Japan continues a legacy of excellence and dedication to authentic Japanese cuisine, now under the passionate leadership of Chun and Sophie Chan. On 2019, Chun and Sophie took over the Green Bay location, bringing with them over 20 years of experience in Hibachi restaurants from across the United States, including Minnesota, Utah, Denver, Seattle, and Las Vegas.

Chun and Sophie, along with their young son, moved from Minnesota to Green Bay with a vision to maintain the high standards set by the previous owners while also infusing their unique touch and extensive culinary expertise. Their journey in the restaurant industry began in 2002, and through years of hard work, they have developed a deep understanding of the art of Hibachi and Japanese cuisine.

In the Japanese culture, acts of kindness, appreciation, and hospitality are expressed through the comfort of food. Chun and Sophie are committed to preserving these values, ensuring that every guest at Mashima of Japan experiences the warmth and dedication that goes into every dish. Despite the challenges, including navigating the complexities of a new business environment and maintaining a high level of service during the COVID-19 pandemic, they have remained steadfast in their mission.

Chun believes in the importance of resilience and dedication, often working seven days a week to ensure the restaurant’s success. He understands that the restaurant industry is ever-evolving, especially in a place like Green Bay, where finding and retaining skilled staff can be a challenge. However, with a loyal team and a commitment to excellence, Chun and Sophie have built a thriving business that continues to delight customers.

The new logo of Mashima of Japan symbolizes unity, harmony, and a modern approach to traditional Japanese aesthetics. The circular shape represents completeness and balance, while the three abstract shapes within signify the harmonious blend of elements that create a unique dining experience.
